Slice & Bake Cookies: Halloween


Happy Halloween!  During the holidays when I was younger, one of my favorite things was to make those famous  Pillsbury slice n’ bake cookies with holiday themed designs.  For these fun Halloween candy corn cookies, you don’t need a rolling pin or cookie cutters.  Stay tuned for future holiday slice & bake cookies.

Slice & Bake Cookies: Halloween

Servings: About 5 dozen (60 cookies)

Ingredients:

-1/2 cup butter (1 stick), at room temperature (soft)

-1 1/4 cups sugar

-1/3 cup milk, at room temperature

-1 egg

-2 tsp vanilla extract (or 5-7 drop of vanilla concentrate)

-1/2 tsp baking soda

-1/4 tsp salt

-1 1/2 cups whole wheat flour

-1 1/4 cups white wheat flour

-1 cup white chocolate chips or yellow baking chips (order online here)

-Food coloring powder

Directions

For Cookies:

1) Cream the butter and sugar together in a bowl.

2) Add the egg, milk, and vanilla to the bowl.  Whisk together until uniform.

3) Sift the flours, baking soda and salt together with a fine mesh strainer into a separate bowl.

4) Combine the dry sifted ingredients into the wet ingredients.  Stir until evenly distributed.

5) Divide the dough into 3rds.

6) Color 1/3 of the dough orange using food coloring or coloring powder by mixing pink and yellow or red and yellow.

7) In a square or rectangular pan fitted with plastic wrap or parchment paper, layer 1/3 of the plain dough, the orange dough and the remaining plain dough on top.  Refrigerate the dough to set at least 45 minutes or overnight.

Making the candy corn shapes:

1) Preheat the oven to about 215-220 degrees Celsius

2) Take the dough out of the pan, slice into thin 1/4 inch thick slices, then cut into triangles.

3) Bake the cookies on a parchment or foil lined baking sheet for 10-12 minute until slightly brown on the bottoms.

4) Let the cookies cool completely for at least 15 minutes.

5) Melt the white chocolate or baking chips in 20 second intervals in the microwave or over a double boiler.  Mix in yellow food coloring powder until the correct color is achieved if using white chocolate chips.  I just used yellow colored baking chips because it was easier!

6) Dip the base of each cookie into the melted chocolate and put on parchment paper.  Let cool in the refrigerator for 10 minutes to harden the chocolate.

Below are the ingredients used in this recipe.  The white chocolate, food coloring powder, and vanilla can be found at Home Plus.  The butter can be found at Costco and the flours at your local mart.  If you prefer to use yellow baking chips, they can be purchased on gmarket, follow the link above. *I recommend buying 2 boxes of the food coloring powder, it is a bit weak.
