Octoberfest – Braised Red Cabbage

This sweet and sour cabbage is the perfect accompaniment to my Octoberfest menu including BBQ roasted chicken and baked beans.  This also makes a good topping on my Black Bean Veggie Burgers.

Braised Red Cabbage

Servings: 4


-1/2 large head of red cabbage (4-5 cups)

-2 Tbls I can’t Believe It’s Not Butter (or regular butter)

-1/3 cup apple cider vinegar

-1 cup thinly sliced apples + 3 Tbls water (or 1/3 cup apple juice, if you can’t get apples)

-1/4 cup sugar

-2 tsp salt

-1/2 tsp pepper

-1/8 tsp cinnamon (optional)


1) Put the butter and red cabbage in the pot over medium-high heat.

2) Add in the vinegar, apples + water or apple juice, sugar, salt, pepper, and cinnamon.  Bring to a boil, then reduce heat to low for about 1-1 1/2 hours until the cabbage is tender.

Serve and enjoy.
